Growing up and going to Spain, this was one of my favorite candies. Known as “Turron” in Spain and “Torrone” in Italy, these candies are made by whipping egg whites together and adding honey or sugar, roasted nuts and sometimes candied fruit. Some people say the nougat can be traced back to Roman times.
There are three basic kinds of nougats:
White – made with egg whites and honey.
Brown – made without egg whites, and has a crunchier profile.
Viennese or German – Made with chocolate and nut praline.
In the United States, many of our candy bars have nougat, such as Mars bars. Enjoy some nougats today!
