Since eating sharks, and especially shark fins, is frowned upon due to their marked decline in population, recipes calling for shark now use other types of more plentiful fish. To celebrate the glory that is “Shark Week” and “SharkFest,” while making a more conscientious choice, try out this recipe for “shark bites.” These shark bites are made with yellowfin tuna chunks that have been blackened and grilled. These are great served with green ranch sauce.
Ingredients – Shark Bites
- 1 pound (0.45 kg) fresh yellowfin tuna, cut into 1 inch (2.5 cm) chunks
- Blackened Seasoning
- Green Ranch Sauce
Ingredients – Blackened Seasoning
Makes ¼ cup (60 g)
- 1 ½ tablespoons (22 g) paprika
- 1 tablespoon (15 g) garlic powder
- 1 tablespoon (15 g) onion powder
- 1 tablespoon (15 g) ground dried thyme
- ½ teaspoon (2.5 g) ground cumin
- ½ teaspoon (2.5 g) of salt
- 1 teaspoon (5 g) ground black pepper
- 1 teaspoon (5 g) cayenne pepper
- 1 teaspoon (5 g) dried oregano
Directions – Blackened Seasoning
- Mix all together.
Ingredients – Green Ranch Sauce
Makes 1 ½ cup (350 mL).
- 1 cup (235 mL) mayonnaise
- ½ cup (120 mL) sour cream
- ½ cup (120 g) of fresh cilantro
- ½ teaspoon (2.5 g) dried chives
- ½ teaspoon (2.5 g) dried parsley
- ½ teaspoon (2.5 g) dried dill weed
- ½ teaspoon (2.5 mL) of lime juice
- ¼ teaspoon (1.25 g) garlic powder
- ¼ teaspoon (1.25 g) onion powder
- ⅛ teaspoon (0.6 g) salt
- ⅛ teaspoon (0.6 g) ground black pepper
Directions – Green Ranch Sauce
Mix all ingredients, until smooth, in blender.
Directions – Shark Bites
Soak 6 inch skewers for an hour. While waiting, season tuna chunks well with blackened seasoning. Skewer 3 tuna pieces on each skewer. Grill for about 3 minutes on each side. Serve on a plate with green ranch sauce. Enjoy!
