Summer Salads

There is no better way to enjoy the bounty of summer berries than to include them in a salad. The key is to include other “non-sweet” flavors to give the salad a well-rounded flavor profile.

If you are making a large salad for a dinner party, one trick is to layer the goodies so that the first guests in line don’t get all the good stuff. Also, keep the dressing on the side, since berries are very susceptible to acid in dressing and will quickly lose their integrity once tossed.

When it comes to dressing, for these “brightly flavored” salads, be sure not to go too heavy. You just want to lightly coat the ingredients and not overpower the delicate berry flavors. There are a myriad of dressings, and it is best to stay with the same style – like papaya vinaigrette or any citrusy vinaigrette.

Spinach Salad With Berries, Bacon, and Gorgonzola

Ingredients

• Fresh Spinach – Washed and Dried
• Fresh Berries – Raspberries, Blueberries, and Strawberries
• Candied Pecans
• Gorgonzola Cheese (or any Blue) Crumbled
• Bacon – Hickory-Smoked
• Fresh Croutons – or Crostini
• Tomato Wedges – (they are fruit, too!)
• Dressing of your choice

In the end you have a salad that meets all the criteria for a great dish: crunchy, creamy, sweet, and tart … all in one dish.
